There are few guarantees in life.  However, one thing is for sure.  If you fry it or stuff it in a puff pastry… I will eat it.  I just love crispy foods, and these curry pies are one of them.  These are delicious crispy pastries filled with a curry mixture that I loved ever since I was a kid.  They’re pretty simple to make and much cheaper than buying them at the bakery.  Typically, they come with either beef or chicken curry mixture, but I use ground turkey to make me feel better about indulging in these crispy treats.  

 

The best part of this pastry is obviously the crispy exterior.  Although you could make the pastry dough yourself, these frozen pre-made dough makes life and this recipe so much easier to make!  Just make sure to follow the instructions and defrost them in the fridge overnight.   From there, they should be relatively easy to unpack and unfold.Chinese Curry Pies1

Because curry has complex spices and flavors, it’s typically hard to make from scratch.  That’s why I use these little suckers.  Pre-made curry mixes in the form of convenient little blocks.  They pack the right flavor necessary and they’re a easy to use.  They come in 2 separate packets and they’re soft enough to break apart.

When you’re cooking the ground turkey, there will be some moisture that cooks out of the meat.  Don’t worry!  Because you need moisture to dissolve the curry paste, your filling won’t turn out watered down.  After simmering the curry filling for about 15 minutes, it should look like the picture below.  Make sure to cool the filling to at least room temperature or the heat of the filling will start cooking the pastry dough.

After making a couple of these pastries, I realized you can fit more of the filing into each one by cutting out the little holes on the top of the pastry before  assembling them.  That way, there’s more room to fill the pastries up.  So..even though the pictures show me assembling the pastry dough and then cutting the tops of them diagonally, do the reverse.  Cut the diagonal slats before putting the pastry together and then crimp the top and bottom pieces.

Chinese Curry Pies

  • Servings: 3-4

Chinese Curry PiesIngredients

  • 1.5 Tsp of Oil
  • 1/2 Medium Onion, Chopped
  • 1 lb. Ground Turkey
  • 3.15 oz of Golden Curry Sauce Mix (aka. 3 squares)
  • 3/4 Cup of Water
  • 1 Package of Puff Pastry

Instructions

  1. Heat the oil in a pan over medium heat and cook the onions for approximately 3 minutes or until golden brown.
  2. Add the ground turkey and continue to cook over medium-high heat until all the meat is cooked through.
  3. Add in the curry sauce mix and water.  Turn the heat up until the mixture comes to a boil and then turn it down to a simmer and cover.  Allow the mixture to cook for about 15 minutes at a simmer until almost all the water dissipates and only a thick mixture remains.  Before you stuff the filling into the pastry dough, make sure it cools down to at least room temperature.
  4. Unfold your puff pastry and cut each sheet into 9 squares.
  5. Spoon 2 Tbspn of the curry mixture into the middle of a puff pastry square.  Spread the mixture evenly across the square, but make sure to leave a border in order to put the top of the puff pastry on top.
  6. Take another puff pastry square and cut 3 holes diagonally in the pastry.  Place the top puff pastry square on top of the bottom piece and crimp the sides using a fork.
  7. Bake at 400° F for about 20 minutes or until golden brown.
