When work gets crazy, I definitely turn to my go-to “recipes” that really don’t require measuring. If writing this blog has taught me one thing…is that I don’t like measuring. I’m more of a ehhh…feels and/or looks about right. So I wanted to share one of my no recipe recipes! It incorporates two of my favorite new things: Organic Baked Tofu and Chili Garlic Sauce. This recipe is simple, but is filled with healthy ingredients that make you feel good about making a quick meal. First off … the cast of characters couldn’t be simpler.
Of course this California girl has to give you a California Sushi Rolls Recipe! Although this recipe isn’t difficult, it definitely takes patience prepping all the components and individually rolling and cutting the rolls. But, how satisfying is it to make something as fancy as sushi rolls for a special weeknight dinner!
Remember these Carrot Cake Muffins? My husband and I really could not get enough of these! But one thing that did bother me about the original recipe was how much oil was in them. At the same time, my curiosity peaked about coconut oil. After some research, I thought… why not replace the vegetable oil with coconut oil?
Night Three: Kielbasa Hash
Remember last night, when you made that delicious Kielbasa Lentil Soup? When you pre-chopped up all your ingredients for tonight’s meal? Aren’t you glad you did that? Now all you have to do is cook up your delicious meal! To recap, here is a picture of the kielbasa sausage (cut in 1/4 inch slices) that we’re going to use for the hash. If you haven’t done so already – dice up your onions & potatoes and, mince your garlic clove.
